What's Cooking?



While I love cooking and baking its easy to get discouraged when you spend an hour making a meal only to have my little moose complain that they dont like it seconds after sitting down to dinner. Im not a short order cook but there are times when I think it may be easier. IronMoose and HulkMoose will try whats on their plates but the have definite preferences. IronMoose is not a veggie or fruit fan. He will eat green beans and corn with out protest but any other veggies or fruit and he is not a fan. HulkMoose loves fruit but when it comes to veggies he is like his brother with the addition of carrots. We are always trying new things and creative ways to get them more fruits and veggies. I remember reading thatincoperating your kids in the cooking process can make them more likely to try new things. We made a Ground Beef Casserole the other night and the kids had fun helping me and sampling all the different ingredients along the way.

Ground Beef Casserole
Makes a 9x13 and a foil pan freezer meal.

2lbs ground beef
Webers Gourmet Burger seasoning (or your own combination of your prefered meat spices)
1 onion I used purple
4 c. cooked rice
3 small cans tomato sauce
2 c. chicken broth
1 can carrots (drained)
1 can corn (drained)
1 can peas (drained)
Shredded cheese.
1. Saute chopped onion add ground beef and webers seasoing and cook through. Drain.
2. Add rice, chicken broth, tomato sauce, drained veggies and cheese and mix together. You can add more of the Weber seasoning if you like. Simmer on stove for 3 to 5 minutes. 
3. Spread mixture in your 9x13 pan and bake at 350 for 15 minutes. 
4. While your 9x13 is cooking spread remaining mixture in your foil pan for a freezer mail later. (Reheat at 350 till warm through, top with extra cheese put back in the oven till cheese is melted)
5. Remove after 15 minutes top with cheese. We used a chedder blend. Return to oven for 10 minutes till cheese is nicely melted.

This dish is easliy personalized to your own taste preferences. My moose devored this and had no complaints even with the added veggies!!

Hello Blog World,
Meet me Mrs. Moose a 28 year old wife to my hard working man (Mr.Moose). We own a house together and love doing fixer uppers projects ourselves. In our Moose Manor (or wanna be Manor :)) live our 4 boys. Oldest one IronMoose is 5 and starting Kindergarten this year. (ahhhhhh) HulkMoose is 3.5 and loves being active and is all rough and tumble boy. Rounding out our herd is CaptainMoose and ThorMoose who are 12 week old twins. I absolutely love being a boy mom although I am a bit nervous about all the adventures Im sure await me. I love cooking and baking and trying new foods. I can never take to many pictures and love all things pinterest :). Join me as I capture, record, and remember!!
